Sweet Potato Chia Seed Muffins




Ingredients:

1 tbs. chia seeds,ground

1 c. whole wheat flour

1/2 c. white unbleached flour

2 tsp. cinnamon

1/2 tsp. nutmeg

2 tsp. baking soda

1/2 tsp. salt

1 lg can of yams (approx 27 oz)*

2 eggs

1/4 c. extra virgin olive oil

1/2 c. agave nectar

1 tbs vanilla extract

Preheat oven to 350 degrees


1. Mix dry ingredients together in a bowl. In a seperate bowl mash sweet potatoes then mix in the rest of the wet ingredients.

2. Fold the wet ingredients into the dry ingredients and spoon into muffin tins

3. Bake for 25-30 minutes or until a toothpick inserted into the middle of a muffin comes out clean

4. Store completely cooled muffins in a a sealable plastic bags in the freezer


Optional: *Canned pumpkin (16 oz) can be used in place of sweet potatoes. Also chopped nuts can be added.



I was surprised because usually my family is pretty weary of my healthier food recipes but this one was a hit with the whole fam. :)
